Sweet Potato Casserole Evelyn Altman
2 (32 oz.) cans candied yams (drained) Vi Stick Butter, softened
1 Vi Cup Sugar 1 Egg
1 Tbsp Vanilla flavoring
Topping:
1 Cup Chopped Nuts
1 Cup Light Brown Sugar
Vi Stick Butter, softened
Beat together yams, sugar, butter, egg, and vanilla until smooth (may be easier if you heat
yams and then drain them before mixing).
Put in 9x13 inch casserole dish, which you have sprayed with Pam.
Mix topping ingredients together (will be crumbly). Sprinkle over potato mixture.
Bake in preheated oven at 350 for 35 minutes. May mix up night before, however, wait
and put topping on just before baking.
Pineapple Casserole Carolyn Cannon
In a large zip-lock bag, crush 1 sleeve of Ritz Crackers. Mix in 5 oz. grated mild
Cheddar Cheese. Set aside.
Drain: 1 can of chunk pineapple and 1 can of crushed pineapple.
Put drained pineapple in a flat baking dish that has been greased with margarine.
Mix 2/3 cup of sugar and 5 T. flour. Sprinkle over pineapple.
Cover with Ritz Cracker and Cheese mixture previously set aside.
Melt 1 stick of margarine and pour over casserole.
Bake at 350 for 30 minutes. Enjoy!
