               CUCUMBER CINNAMON RINGS                     CAROLYN CANNON

               2 gallons cucumber rings
                       (peeled, hulled and sliced into rings)
               2 cups of pickling lime
               water to cover

                       Soak for 24 hours, drain, rise in cool water, soak 3
               hours in cool water, drain

               1 cup vinegar
               1 tablespoon powdered alum
               1  large bottle red food coloring
               water to cover .

                       Heat to bubble, simmer 2 hours, drain, cover with
               syrup.

               SYRUP

               2  1/2 cups water
               3  cups vinegar
               10 cups sugar
               8 cinnamon sticks
               1 large package of cinnamon hearts

                      Bring syrup to boil, pour over rings. Cover and let
               stand for 24 hours. Repeat 3 more times for a total of 4
               times. Last day, heat syrup and rings together to full
               boil; pack in jars to seal.
