VIRGINIA CS,_EASY EGG
CUSTARD-EIE MIBG1NXA__QMISL
4 slightly beaten eggs
1/2 cup sugar
1/4 tsp salt
1 tsp vanilla
2 1/2 cups milk, scalded
1 9" unbaked pastry shell
Thoroughly mix eggs, sugar, salt and vanilla. Slowly
stir in hot milk. At once pour into unbaked pastry shell,
(to avoid spills, fill at oven) Dash with nutmeg. Bake in
very hot oven (475 degrees) for 5 minutes, reduce heat to
425 degrees and bake-1,0 minutes longer or till knife
inserted halfway between center and edge comes out clean.
(I prefer to spray a casserole dish with Pam and bake when
taking to someone who is sick and can't eat pie crust)
METHODIST—EIS
CRUST :
18 graham crackers
2 tablespoons sugar
1/4 cup or 1/4 pound butter (melted)
Roll crackers, mix sugar and butter together. Add
cracker crumbs and mix well
FILLING:
1 1/2 pounds Philadelphia cream cheese
3/4 cup sugar
3 whole eggs
1 tsp lemon juice
1 pinch salt
Line a 10“ pie pan with graham cracker crust mixture.
Beat cream cheese thoroughly until fluffy. Add well beaten
eggs, sugar and other ingredients. Pour into crust. Bake
exactly 20 minutes in a preheated oven at 375 degrees.
Remove from the oven and spoon carefully 1 pint sour cream
to which has been added 2 tablespoons sugar and 1 scant
teaspoon vanilla. Glaze in oven at 475 degrees for 5
minutes more; watch carefully. Chill before serving.
